Drop the Dog and Moove away quick.
No stranger to the dogs debate and also 50% beef farmer, I'll try to explain.
Beef cattle (castrated males) are generally very docile and afraid of dogs but can be curious of people/things that cross their path.
They can show this curiosity by approaching you, sniffing about you, licking you even but they will generally scatter if you shout/wave your hands etc.
Cows on the other hand can be come quite agressive especially if a dog is present as they , I suppose , see the dog as a threat to calves(sometimes even if no calf is present in the herd).
Faced with your situation you would have been better to allow the dog run free, leave the field yourself and then call the dog to you. Keeping the dog with you in this type of situation only serves to put yourself in danger, unless you can run faster than your dog.
